This is an evening when the lights are dimmed and dishes arrive at the table having been prepared without the kitchen using a single watt of artificial energy. Blackout Dinner is more than just a dinner – it is a carefully curated experience built around a thoughtfully designed menu, where every ingredient and preparation method matters. This time, Blackout Dinner is a collaboration between Gerli Travkin, Head Chef of Fotografiska Tallinn’s restaurant, and Carlos Henriques and Albert Franch Sunyer, co-founders of Helsinki’s Restaurant Nolla. The menu follows one clear principle: the journey of each ingredient should involve as little electricity as possible, from growing and preserving to processing and preparation. It is a conscious challenge to conventional kitchen practices, where electricity plays a role in almost every step. The electricity footprint of a restaurant can be significant – and continues to grow over time. Nearly every stage of storing, processing and preparing ingredients requires electricity to some extent. But we ask: what if we did things differently?
